A few American recipes still call for dry ingredients by ounce (avoirdupois) rather than fluid ounces. To convert: 1 ounce = 28.35 grams. So 4 ounces of butter is 113 grams. The conversion is the same whether you're weighing flour, sugar, or anything else solid.

One source of confusion: a "fluid ounce" is a measure of volume, not weight. One fluid ounce equals about 30 milliliters. For water, a fluid ounce weighs roughly the same as a regular ounce — but for everything else, those numbers diverge.
